It refers to his future husband.
All the good men are taken. 😇
"Mister, you dropped some gold in the street and I'm the only one honest to return it to you."
Gold? GOLD? That commoner would get murdered so fast by his family. Or at least get permanent stink-eye from everyone he knows. He wouldn't last long enough to get to the shrine.

I think someone mentioned it, but the OP quest sounds like a soul-searching one. "Heart of an honest man? What am I, chopped liver???"

Feh. What is his family going to do with gold? You can't eat it. Gold is for bankers and merchants. What his family could really use is a 10 lb sack of flour or a bushel of apples or a cask of small beer.

Call me a cynic, but I rather like the idea that only a man who can’t speak would truly qualify as honest for this purpose.

Oh! Maybe it’s a Kenku who’s name is the sound of a heartbeat.
its not just that they cant speak, but also they never witnessed dishonest behavior or heard lies: the ultimate blank slate! :P

Depend on the goddess, I guess.

Long ago, a devout warrior died and was mummified. His body guarded the family / ancestors' tomb. The cleric is to bring the canopic jar containing the mummy's heart (and other internal organs) to the shrine.
(The god will then provide instructions where to place the jar so the mummy can protect its distant descendants now in diaspora.)
