Into the black by Bastion Press has a mindflayer analogue race, begins with a P. Palethemon?

Complete Minions by Bastion has Parietophages, another mind flayer analogue.

Bastion is very free with OGC, I believe minions is 100% OGC.

Tome of Horrors Revised is very good as well for OGC, other SSS/WW d20 monster books are very restrictive, just allowing stats. So creature collections, everquest monsters, and Warcraft monsters are not good fits unless you are willing to rename creatures.

Hmm, what was CR was the Mind Flayer stand in? Perhaps I should pick up this book!

I would recommend the same monster from into the black, though I would get it from Monster Geographica underground.

2) Sub out some of the psi-like abilities for powers that fit your theme.
3) Slap it on a monstrous humanoid of your choice, like the doppelganger.
4) Make an entire race of them in your setting.
