Horses

I've been coming across lots of technical terms for horses recently: bay, garron, destrier, courser, etc. Could someone who has a clue enlighten me as to what they mean? Also what are their properties (which are faster/stronger etc.) and how does this convert into D&D. I currently get lost at any more detail than horse, mule, donkey...

I bought it, winced at some of the editing, but found the terms and concepts useful. I especially liked the table of horse traits.

ummm, I can't remember who they are, but they have all those splats with the girls on the front...
 

I'm too tired to remember where this is, but someone did a 3e update for the old Forgotten Realms Monster Compendium.

Within it is a section on all the different types of horses from all over the realms, basically a bunch of different mini-templates to put on your standard book horses to give them a more regional feel and distinguish between the different breeds.
