The fact that most commoners will die before being turned is the reason that vampires don't just instantly wipe out any community they inhabit. The victim has to be either lucky or powerful, or it just won't work.

Or the vampire spawn is chosen. It's a central theme or trope of the vampire. The vampire selecting those who wishes to turn.

And part of that choosing tends to be the vampire taking it easy on the victim, turning them over the course of several days, which still kind of fits.
