How do you make a Barbarian interesting? :)

What really sold it for me was the level 7 advantage on initiative and "cannot be surprised" It adds a cool "Lone Wolf and Cub" aspect to it, no ninja is going to get the best of him. I also added in Alertness feat.

Very fitting.

What subclass did you choose?

I chose Beserker, I liked the charm and fear resistance at level 6. He was a ronin style guy, but still had honour, if he ran in fear or attacked his friends we would commit suicide. I never got to level 10, but I liked the "thousand yard stare" feel to the intimidating presence and at high level the reaction riposte attack would be appropriate too.

We were new to the game and thought that exhaustion levels dropped during short rests, we also thought each source of bonus actions stacked. So the two main issues around beserkers being sub-optimal were addressed by accident. By the time we found out we did not bother to change it, since he was a well-rounded character with skills in diplomacy, performance and calligraphy, he was not exactly a min-max munchkin.

Yeah I thought bonus actions stacked when i first started. My GWM Berserker attacking 3 times in one round at level 3-4 was not much fun for the other players.

Edit: Oh and I can definitely see the Immunities, Intimidating presence, and Retaliation working for the concept.
