How do you picture the riding dog ?

Great tempermant? Maybe for around families, but Newfies and St. Bernards don't bite train anywhere well enough to be the in the war-mount class because of their gentle-giant temperment. A fine 2 HD of dog for a family with kids who like to swim.
 

Big Dogs I have known (that could be used as Riding Dogs in an FRPG):

A "Warlock" Mastiff- 200lbs+, at least 2'6" tall, very stocky. Head the size of a Thanksgiving turkey, well trained enough to ignore said turkey unattended on a table.

A "Half Timberwolf/Half Akita"- 195lbs, more than 6'6" tall on his hind legs. While not stocky, he was fairly fast with a high endurance- he could run for days. In this group, he'd be the "quarterhorse" to the other dogs' "clydesdales."

Half Newfoundland/Half Aussie Blue Heelers- while the one I actually met is only about 60lbs, she was the runt. As far as size goes, her siblings took after daddy. Heavy white newfie coat with blue heeler spots. Resembles a long-haired dalmatian (if such a breed existed). Almost as big as newfies, almost as smart as ABHs.

In general, I think you could use any dog breed over 100lbs as a riding dog for a small PC. Remember, not every warhorse was a huge hulking beast. Some cultures valued stamina and speed over mass and power in their warhorses- like the Arabians or the Mongols.

To that end you could even use templated dogs for this purpose...Dire Border Collies, Legendary Dobermans, etc.

First off, I agree with all that you've said.

I always think of Jack Russell terriers as being the one breed which focuses on Con to the extent of all else. I once heard a vet describe the difference between a ShiTzu and a Jack Russell like this:

"The Shi Tzu stubs its toe and keels over dead. The Jack Russell gets cancer, hit by a car and will still say to an Alsation c'mon, if you think you're hard enough!"

True or not, I like the image, and my Ranger PC got a dog companion, and the DM was happy for me to make it a small dog with 3 points moved from his Str to his Con. Not so much a fighting dog as a staying alive dog :)
