How does Playing by Email work?

I wish I knew how to do a play-by-email game. I've polayed in a few play-by-forum post games in the past.. although the last time I did that was a truly amazing d20 modern game.. unfortunately the brilliant DM passed away. He had us coming back regularlly because we just wanted to see how the game would progress. he had the pacing down perfectly.

Whether by email or by forum, there's not much difference aside from how messages get from one person to another, how they're organized, etc. I prefer forums such as Playing the Game, ISRP, PlayByWeb, rpol.net, etc. because they're a lot tidier.
