In my undersea game, I have a merfolk-like race, the Uphyra, whose lower halves are those of jellyfish. Also, the teratomorph (3e MM2) is one jellyfish you don't want to shake a stick at.

The Oozemaster PrC might also apply to undersea jellies and oozes.

As far as a main course is concerned, I always thought that jellyfish tasted not unlike a rubber band.
