I use the same method as Gunman. I roll anything the players don't know the results of (searches, hides, etc) basically anything they'd look at the roll of and say "Well I screwed that up, I try again."
It doesn't really come up all that often, and in some cases I let them roll these things, but generally it makes it easier to just ask "Whats your hide?" and roll it so the player doesn't consciously or unconsciously act different knowing he rolled a 2 on his sneak vs an 18.
