D&D 5E How would you make a Jedi in 5e?

Using the current 5th edition D&D rules, as well as allowing Unearthed Arcana stuff, how would you build a Jedi in this game?

With the newest Unearthed Arcana, below 5th level, etc, I'd go with immortal mystic (for Luke, Vader) or awakened (Yoda). It's sketchy, not all the rules are there yet.

Let's ignore that.

Jedi are space wizard ninja paladins. They cover a versatile set of roles: technologists, mystics and mind controllers, sneaky single agents, moral guardians of goodness.

So we're going to have to pick a focus here, because RPGs are team sports.
I suggest starting with the cleric, Knowledge, Trickery or War, respectively.

This gets us a reasonably competent warrior frame with the powers of a devotee to a cause. We're still going to need a few eldritch powers; I see the Mind Trick, short range telekinesis, and lightsaber itself as most important.
mind trick: The knowledge domain gets us command and suggestion on the spell list. Failing that, a few levels in bard or wizard (enchanter). Trickery gets us charm person.
short range telekinesis: this one's a pain, depending on what you want. Spiritual weapon is a good catchall for "special effects attack", like flinging stuff or your actual lightsaber. This is really a wizard schtick, though -- consider multiclassing for mage hand. Anyway, the cleric list itself gets us Enhance Ability for being strong, fast, etc as a result of telekinesis.
lightsaber: sweetest portmanteau in English. Paladins can do it with sacred blade. Magic weapon or light might also approximate it. See if you can get access to tye druidical flameblade.
 

I'm thinking Pact Blade warlock as the core of the class - the summon-at-will weapon is very lightsaber-like - using either Archfey or Great Old One patron reflavoured as particular Force traditions. Rather than having obligations to a patron, the character is subject to guiding visions through the Force, which may be for their own benefit or may be guiding them to serve some greater destiny.

There's plenty in the Warlock spell list that could be flavoured to represent Force abilities, but I probably wouldn't go pure Warlock. The character will probably want some martial oomph to back up their melee focus, maybe from some Fighter levels, though a smattering of Paladin would also be appropriate.
 

"A jedi" is kinda oversimplifying things. There are no less than three major roles (aka classes) of Jedi, each with their own various specializations. There really isn't any one class that could do all three of them well, you are better off picking a different class for each branch.
 

Fighter-Battlemaster 15/Immortal Psionic 5, with the rules we currently have would make for a reasonable approximation of a jedi guardian.

2 levels fighter, and the first level of Mystic Adept from the latest Unearthed Arcana.
A magic sword - a Vorpal energy blade.

That gets you to Padawan. 3 more levels, at least one each F & MA, to knight. At least 10 levels, min 4 each, for Master.

And if aiming for the Prequel movies, No wisdom score above 7.

To be fair, few characters in the prequels had a wisdom score above 7. Darth Sidious and . . . It's a competitive environment for who had the least amount of will power and common sense. Even the characters who started out looking okay, end up making some very poor decisions (think Mace Windu and just how smart it would have been to send out a warning to your compatriots before trying a ham-fisted coup).

Elemental monk. Proficiency with Rapiers, Allowed to use rapier with unarmed strike and flurry. Change the elemental spells to more Jedi-like equivalents.
