I'd start this one up myself, but I don't have the artistic or layout skills to pull it off.
I'm starting work on writing up something for such a project. I'll make a hard commitment to 1,000 words (Phil, no laughing, I got a day job dude).
The Federal Emergency Management Agency reccomends the following charities

I would reccomend something from this list (so that the money can get to the victims of Katrinia), but one of them that also did work beyond US borders (so our friends in other nations won't feel like they're being snubbed). If nothing meets those criteria than I'd suggest the American Red Cross, since they at least have some connection to international organizations.
