Does anybody know if you can interrupt someone else's turn with an immediate action? I know that you can go when it's not your turn, but can you actually go, say, between someone else's standard and move actions?

Yes. You can use an immediate action whenever you want, except when you are flat-footed or have already used an immediate or swift action. Using featherfall in such a way could disrupt an enemy spellcaster if they cannot determine what spell you are casting (if they fail the save, they need to roll a concentration check to continue casting).
