I don't think how many is as important as why.

I have these people in the group.

Wizard - will probably never multiclass doesn't see any gain or role play reason to do so.

Cleric/Sacred exorsist (I think it is called) - Became one when he realized what sorts of things the big bad organization was throwing at them.

Fighter/Bard (monte)/ bladesinger - wanted the PrC from 0 level (started as an apprentice) on.

Rogue/Fighter - mostly rogue 2 levels of fighter becuase he thought himself ineffective in combat, wanted to Toughen up. Plans to take spellfire weilder at like 13-15th level. Mainly becuase he is one of 3 he knows of. Long involved campaign plot has it but can't let anyone know he has it.

Fighter/ranger(monte)/windrider - Started out as a scout/soldier character now main stay fighter with a nasty wolf/silver dragon mount. Took wind rider becuase he wanted to stand out a little more. MOre a Player concern than a character but a valid point either way. Now he couldn't be happier

Rogue - A basic thief wants to stay that way no multiclass/PrC aspirations. this is his second character first being a straight fighter.

I don't care how many multiclass or do other things as long as the character or the player has a legitimate reason and yes wanted more power is a reason. As far as min-maxing I can out do my players anyday and they know I will if they push it to far.

Past campaigns I have played in have been close to 100%. The current one I am in is probably around 50%. I think at first a lot of people like the idea of prestige classes and wanted to try them. Kits in 2e were way out of balance and people wanted something different and wanted to play with the new multiclass system. As people get familiar people are settling in with single classes. Certain classes still beg to be multiclassed IMO. Sorcerers for exaple get nothing but spells and familiar upgrades. There are some nice prestige classses that you only have to give up the familiar upgrade for.

My current character is a Bard (Monte) who I want to make a master Harper. It will be a fun character to play I think.

Fair amount of multiclassing. I tend to run campaigns with religion as a significant theme, so a lot of my players picked up some cleric/druid this time around...

Bard 1/ Cleric 4 - Human Knowledge Cleric who wanted a jump start on the knowledge skills. Also very diplomatic, so used bard to pick up some interpersonal skills not available as the cleric.

Ranger 1/Cleric 1/Fighter 4/Order of the Bow1 - Human Archer. Ranger for skills, Cleric for Domain abilities, Magic Weapon, Cures, and Know(Religion) Fighter for feats. Probably will pick up Divine Archer (religious version of Arcane Archer, so cleric was necessary for that.

Wizard 6 - Dwarf who doesn't plan to multi or prestige.

Fighter 4/Cleric 3 - Dwarf who started as a fighter, but was called into Moradin's service. The group tank.

Bard 7 - Hobbit. No plans to multiclass or prestige. Think he toyed with the idea of Rogue levels, but decided spells and bardic knowledge were worth focusing.

Druid 6/Barbarian 1 - Orc Gothi who took a level of Barbarian for rage and weapon options.
 


With prestige classes, roughly 100%. Without prestige classes, closer to 50%. The spellcasters/psions seem to stay with their class. The primary fighters and rogues seem to take a few levels elsewhere to round out the character.

So, if you count just multiclassing among core classes, it's 3/8. If you're counting PrCs as well, it's 7/8.
