We were going to use summoned lantern archons to teleport messages (and stuff) around the world, but the DM was a little uncomfortable with it.

Not possible, since the spell description specifically prohibits the use of teleportation abilities by a summoned creature.

This was in a previous version of the game, the third edition. That new quirk in spell description didn't appear until the current one.
 

Dire weasels sound like a good trick for killing regenerating monsters once you've taken them out, too.

Here's a trick for party's short a rogue. Summon a mount. Drive it in front of you in the dungeon. It's heavy enough to set off pressure plate traps, big enough to provide cover, and long lasting enough to explore a substantial area. And it serves loyally and well, all for a first level spell.
