If you want to get really crazy, we could give the glyptar an Ego score, similar to an intelligent item, and use that in place of a Use Magic Device modifier to make the check.

eh, it could just keep the maedar's Cha score, and get some kind of racial bonus to UMD? :)

that would seem to be the simplest solution of all...

"A glyptar attached to a magic item essentially has the Use Magic Device skill with a +(10?) racial bonus to activate a magic item."

?

Borrowing from the ever-quotable xerfilstyx again...

Knowledgeable (Ex): Swimming for so long in the River Styx has made xerfilstyxes some of the most knowledgeable beings in Baator. A xerfilstyx makes Knowledge checks for any Knowledge skills as if it had a minimum of 10 ranks in that skill. To surpass the 10-rank minimum, the xerfilstyx must assign more than 10 ranks to the skill as normal.

How about this?

"Activate Item" (Ex): A glyptar attached to a magic item makes Use Magic Device checks to activate the item as if it had a minimum of 10 ranks in that skill. To surpass the 10-rank minimum, the maedar/glyptar must assign more than 10 ranks to the skill as normal.

how about "as if it had 10 ranks in that skill"? i don't believe a glyptar would be advancing and gaining skill ranks anymore...

That's cool. I was just accounting for if the maedar itself had more than 10 ranks in UMD before transferring to a glyptar. We could just as easily say "as if it had 10 ranks in that skill (or the maedar's ranks, if higher)".

"A phase door spell cast on an area containing a maedar using its earth walk ability slays the maedar instantly and irrevocably."

This seems a bit too "old versiony". I'd suggest either dropping it or giving it a flat DC 15 save like the earth glide vs. move earth.

For another example (from Races of Faerûn):

Stone Walk (Su): Urdunnirs can pass through stone and earth as if it were air. They can carry up to twice their own body weight with them in this manner. Urdunnirs (and anyone carried with them) cannot breathe while within stone or earth and must hold their breath while traveling in this manner.
