I had some fun with a Satyr one time. They're just friendly enough to not warrant an outright attack, and heinous enough to really upset any females in the group. :)
 

I gotta chime in on the mimic. Love that one!

I once had an abandoned house full of junk in town. The pcs were pursuing a weird urban stalker into it, and it lived with a mimic and a cloaker. The combination was so cool- it was one of the funnest combats I've run in 3ed!
 

I has a surprisingly fun time with a T-Rex. The character of this comedy was a 13th level fighter (swashbuckler type), who through a failed save verses a spell, found himself randomly teleported somewhere in the Realms, namely, Chult.

Said fighter started trying to find out where he was and stumbled into a chance meeting with a large T-Rex. Rex wins initative and snatches up the fighter and a two failed grapple checks later, finds out first hand what a T-Rex stomach looks like from the inside. On his action, the fighter manages to cut himself out with a ordinary dagger. Which is fine, except it takes his entire action to do it and he is last in initative.

The dumb T-Rex, is delighted to see more food (never drawing the conclusion that he just swallowed this creature earlier). So what happened next was a pattern which repeated itself for some 5 - 6 rounds. The T-Rex would chow down, the hapless fighter would fail all grapple checks and would get swallowed, only to cut himself out. Lather, Rinse, Repeat. In the meantime, all the other players were literally in tears due to the comedy of the situation and the growing frustration of the swashbuckler's player.

It was a race to see who would permanently check out first - the swashbucker or the T-Rex. The swashbuckler ended up with 3 hps left when the T-Rex died.

Mimics are a hoot too.....especially advanced ones. I had an advanced mimic literally 'jelly roll' the entire party once, as the mimic rolled up on itself and trapped the party within the 'rolls' of it's flesh. What a fun battle that was. The battle left such a impression that my players refer to actual jelly rolls brought for snacks as 'killer mimics' during our play sessions.
 

Mind Flayers. If you get then drunk enough can be the life of the party. Get up on the tables and dance, dance dance.

Of course, then the clothes start coming off and one of them comes up with the idea of 'freeing their imprisoned bretheren'. And the next thing you know, you have to bail a bunch of naked illithids out of jail for breaking into a sushi bar & stealing all the Calamari.
 

Kappa. I don't really want to type it all up again right now, but if you go to my Rhunaria link in my sig, then click on the link on the Rhunaria page leading to my old Oriental Adventures page, and from there go to the session logs section.......well, one of the session logs, somewhere between the 3rd and 8th I think, has the transcript of when I had the party encounter a kappa. It was really fun to RP the kappa, and see the players' responses. I still can't believe they actually gave in to its demands and gave it all that sake, shochu, and food.....
 

Githyanki. You cannot go wrong with these guys. A combination of fighter/rogue (Gish), wizard or psion 'yanki (warlocks), and fighter or blackguard (knight/antipaladin) are just brutal if used right, especially on the Astral. And githyanki simply cannot be uncool.

Nycaloths. Invisible and flying, give them flyby attack and they're wicked. Stuck in a dark cavern, or at night, with a half dozen of these things and all you can hear are the whistling sounds of their wings cutting the air...

Baernaloths. Evil Evil Evil that makes your players cry. *cackle*

Fiendish chicken.

The party was cursed with an extremely annoying fiendish chicken of evil temperament; actually the hook for the module (they had to look for someone to cast Remove curse for them...) But the fiendish chicken became the campaing´s most remembered monster.
 

I had a lot of fun (2nd ed) with a lone ultradaemon in a maze. A few gaze attacks and one shadow door later, most of the party is behind respective walls of fire wandering where everybody else went, and if they'd be better off sucking up 2d4 per round for a while, or busting through the wall. Recently in 3rd ed., I'd say monstrous humanoids with cleric levels have been the most satisfying.
 

I've had loads of fun with the Grimlock assassin from Speaker in Dreams. My players were as terrified of her as much as they wanted to strangle her with her own intestines.
