[Multiclassing] Ranger Question

If I take the ranger multiclass and get the once per encounter hunter's quarry, does that mean that I only get to mark an enemy once per encounter, but until that enemy dies I get the bonus damage... or does it mean that I only get the damage once per encoutner???

This has been addressed in the errata.

You can mark one enemy (always the closest) each encounter as a minor action.
The mark lasts until the end of your next turn. So you get it exactly twice (current turn and next turn).
