I mainly notice in the quotations that we have a creature with a minimum of three heads and up to fifty ... but when ears are mentioned, it says "both" as in only two. No ears on the extra heads?

Maybe not--some of the authors have some of the heads as serpentine, or even a snake-head on the tail. Probably, though, it is just the translation from the Ancient Greek.
