Well, my first response was a giant talking snapping turtle, because it's fun to watch the PCs negotiate with something that bites cows in half. Given above, what about a mermaid or merman with an eel's body instead of the fish?

I'd use the sea dragon (not sure of the name) from the Penumbra Bestiary because it is very seaserpent-like and that sounds like a fun mythic sea critter but it may be too much for her one hero. Maybe a fiendish octopus or shark. Demonic infused natural sea predators can be very creepy if done right in a story.
 


When my undersea campaign switched from 1e AD&D pre-Wars GH to 3e D&D post-Wars GH, I had twelve years of game time to "skip over". So I devised the hydrimera; part giant squid, part dire shark, and part feline sea lion (now called sea cat), the hydrimera's ink cloud turned victims to stone. The PCs spent those twelve years as stone statues on the ocean floor.

When it comes to kraken I have my krakidan, a human-kraken crossbreed, and the sykraken, offspring of a kraken and aboleth.

I always love the fantasy & scir-fi of the Sargasso Sea, ships locked in place by the sea weed and the currents, the undead or sea devils guarding treasures long lost at sea.

Shambling Mounds covert for the sea.

Oozes can be fun, think Dark Water. :)
