D&D 5E Natural Weapons

Okay we know 2 player races have natural weapons in volo's guide. Tabaxi have a 1D4 + strength mod slashing natural attack that can be used as a unarmed attack and gives them climbing 20' speed and the Lizardfolk have a Bite attack that deals 1D6 piercing + strength damage.

So anyone figure out any cool things you can do with them?

I do wonder if you can smite with them, make them your pact weapon, and other assorted things you can do with weapons like use a SKT rune on them.

I did hear somewhere that if you prefer dex to strength for attack, a level in monk can do that.

You can smite with any melee weapon attack, including unarmed strikes or natural weapons.

You can't use Pact Weapon with a natural weapon, I don't even see how you would try to?

In general the rules are pretty clear. A weapon is an actual item. A weapon attack can be made with a weapon, or an unarmed strike, or anything else that says it gives you a weapon attack. So if a rule applies to weapon attacks, then it will work with your bite. If it applies to weapons, then it won't work.

Monks can indeed use Dex for their unarmed strike, regardless of any other special bonuses your unarmed strikes get.
