Back to the drow wizard...
You could pull a page from video games, and have them fight an (apparent) drow wizard, and just when they defeat him, he morphs or splits open, and a demon/other creature steps forth, who was controlling the wiz the entire time. Then, the PCs fight the demon.
The drow could be a young dragon in disguise.
The drow could be a construct, made to think it was drow, but ultimately controlled by a more nefarious power.
The drow could be a lycanthrope.
As for special effects:
I used a throat crushing as a Reach spell for a Inflict spell, followed up with pulling the soul out of a fallen character for a Death Knell. Alternately, the target of a Magic Missile or Inflict spell could just spontaneously have blood explode out of his/her body. An Acid Arrow could be a bunch of insects (like fire ants) that swarm the target and bite and bite and bite.
