Monk/Samurai = I am turning Japanese!

<edit>well, CW Samurai stinks on toast. OA Samurai is a fighter with fewer feats and a class feature that isn't very helpful for an unarmed character.

No argument on the CW Samurai, but some do like it.

However, the overall combo with the OA version is a little better than you'd think at first blush (esp. once you factor in the OA 3.5 update in Dragon #318 by OA designer, James Wyatt).

This is because there are feats out there that expand the list of Monk Weapons, and at least 1 class (Sohei) and one PrCl (Shou Disciple) that FoB with weapons.

So, a Monk/Samurai gestalt using such a feat (or additional multiclassing) would have a fairly nasty weapon at his disposal, fully usable with the features both classes bring to the gestalt.

More:

Hexblade/Warlock oozes flavor. The classes complement each others' weaknesses and there is some good synergy between them.

Beguiler/Warmage makes for a terrifying, well-rounded, spontaneous caster with a great spell list and tons and tons of spells/day.

Binder/Factotum for the ultimate in flexibility.

Marshal/Battle Sorcerer or Marshal/Warmage or Marshal/Wilder: A warrior-esqe class that has beneficial auras based on Charisma coupled with an Armored Mage or Psionic class dependent upon Charisma.
 


Soulborns also run on Charisma a bit, so if you dig Incarnum, gestalt them with Marshals, Wilders, Divine Minds, Battle Sorcerers or Warmages.
 

Druid / Totemist = it doesn't say that you can't shape a soulmeld while in wild shape
Crusader or Favored Soul / Incarnate = pretty good background and abilities
