Official Symbol for Law?

Fasces. It's a classic.
Any mathematical symbol, shape, or representation of measurement would work (although you'd probably want to use something with a bit more flair than a triangle). For the Book of Alignment, we used a perfect, empty circle to represent Law and then variations on that symbol for the other alignments (seeing as only lawful creatures would attempt to create a symbol for each alignment).
If it's something a little more mythical you want, have the symbol appear dull and plain at first but expand it into something more when inspected. For example, I used the Law symbol on a portal once and it just looked like a circle etched above the archway. Upon closer inspection, they found the circle was comprised of interconnecting straight lines building the shape of a circle.
