I think, if she fails any of her concentration checks this round, we might be able to take her down. Unfortunately, the Sauropod gives her another hit point pool so the sooner she fails, the more likely we can take her down. If she succeeds, it's going to be a looong fight.

Side note: After all the confusion about shield bashing, I just realized that I can't cunning action disengage AND shield bash as they both use up a bonus action. Best to stay away from the Giant's club and just use the disengage. Sorry about that!

I have him at 42 HP and 7 THP and he took 50, which would still put him down - also you didn't roll the STR save, so I assume that you agree that he's down? I was kind of waiting on you to do one or the other. (By which I mean, either explain to me where you have him at and roll the save, or tell me that he's down). At any rate, I moved along.
