I can only wish those were the stories I told my friends about...
As a vegetarian and animal-rights person, I really feel that I ought to be against this story as evidence of people hurting animals to prove their power. Regardless of how... cool... it may have been, the fact that he killed an innocent... um... shark... as it tried to engage in natural functions of... um... eating his crew...

He'd be worth a hell of a lot of XP, I tell you what.
Let's see... according to this , a 300 kg mako shark is ~300 cm long... (and this seems to confirm that a shark of about that size, the sleeper shark, is found in those waters) that's 3m, about 9'... according to the 3.5 SRD, that just within the range for a Large shark, so that's CR 2.
I figure to whup a CR 2 beastie easily and with style, solo, you've gotta be about double it's CR. That makes our boy Iceman about a 4th level ranger, favoured enemy Animals (Piscine), or Acquatic subtype.
Don't mind me. I'm just figuring out what it's possible to do with Google

I was thinking more like Rogue 3/Ranger 3/Barbarian 2... Most of his skillpoints in Profession: Fisherman and Profession: Boat Captain, along with things like Craft: Nets and Hooks, Rope Use, Navigation, Spot, and Survival... But he seems like the type of fellow who could rage at the right time (Like perhaps when fighting a shark...)... For stats I was thinking maybe STR 18 DEX 12 CON 14 WIS 14 INT 10 CHA 10... Just off the top of my head... But I figure hes pretty tough, slightly more dexterous than average from years spent on fishing vessles and stuff, a rather tough you, got a good wil save, and as for int and cha, those were mostly just pulled out of nowhere. Favored Enemy is Fish. For feats I'm thinking Toughness, Leadership (His crew), and Iron Will, at least.
