The recent Chaosium collection, "Song of Cthulhu" had a Thomas Ligotti essay on "The Music of Erich Zann".
Aside from Joshi, btw, Robert Price is the other big name to look for in anthology editor/Lovecraft critic.
It really depends on how strict the professors are with sources- in my English department we pretty much just did quote-mining, I think I only had a professor check my sources once or twice. One of them was on a Lovecraft paper, mind you, since he'd never heard of the guy.
As an aside, I seem to recall that when I was researching the paper the majority of "serious" (ie academic, if you consider that to be serious) analyses were all in French, for some odd reason.
Anyhow, if things aren't that strict, you can probably get away with one essay devoted to the story and reference some generic collections that might have a good quote about Lovecraft, without being actual essays on the subject.
