Paladin extra-special mounts

IDHMBIFOM, so I can't say for sure, but I would presume that those PrCs would only add to the levels of one of the classes you have for animal companion or paladin mount levels, not both (or in your case, 3 classes). But you'd need someone with the books to confirm one way or the other.

The Halfling Outrider was written ambiguously enough that you can interpret the class so that you advance both your animal companion and paladin mount.

Devoted Tracker feat allows your animal companion to be your special mount.

depends on the wording in the PRC - some specify Druid or Paladin. some use the wording Druid and paladin.

That said.
A) you can't advance a feature you don't have yet. you need at least ranger 4 to use a PRC to advance your ranger animal comnpanion.
B) your on even more shaky ground when it comes to advancing druid animal and Ranger animal at the same time as the default rule is they stack anyway, so there is only one companion to advance.
C) Druid companion can never benifit a non animal unless there is some other grovy feat I'm missing.

That said you can relativly easily work a Character with an animal companion with quite huge Boni this way. - I think the best way I found was an ebberon halfling for the clawfoot which is the default mount for a wildplains halfling and a low level Druid Companion.

There is a section in the DMG for other Special Mounts. I believe (not 100%) that the general rule is the Mount's CR should be 3 less than the Paladin's level or 4 less if it is a flying mount.
Besides this option, there's another set of rules for paladin mounts and leadership in the DMG.

Another question: can a paladin of 5th level dismiss his mount to upgrade it to a hippogriff, say, when he reaches 6th level or is this considered crass?

Cheers

The PrC Arcane Heirophant disagrees with your A)

For your B), it says that Druid and Ranger levels (well, 1/2 Ranger levels) stack to determine your animal companion bonuses. I am advancing only one animal. So, you are contradicting yourself.

For C), read the feat Devoted Tracker, please.
