Actually, here's a stupid question: how do non-adventuring characters level up? Would putting out a fire, making a cermaic pot, or catching fish have a CR?

Well, a Forest Fire is CR 6, so... we could figure it from there. All sorts of traps in a burning building. Yeah, he'd level up PDQ.

I think we might be mistaking fame for Charisma. Michael Jordan wasn't famous when he was a talented youngster. He earned his fame. I don't think he suddenly cranked his Charisma score, but he could boost his social skills. Also, it's easy to mistake Charisma for social skills (so my above examples might be wrong).

Pfister doesn't look like a guy who's hopped up on muscle enhancements. The distribution of his muscles looks natural. Of course, the way he looks means absolutely nothing. I guess I just want to believe he's clean because that would make his accomplishments truly incredible.

Speaking of his body, is it just me or do his legs look reeeeeeeeeally tiny compared to his enormous torso?
