We have a few in WOIN’s Galactic Sentience Catalog. Green, a wooden humanoid species who can shoot seeds, Solurials which are big viny pacifist plants, fungoid species which exude spores.

I heard that Starfinder was gonna have a fungus race in its corebook but it got cut because there wasn't mushroom.

Not sure, but IF I understand it correctly, then the race of Marionettes in the upcoming Italian game Brancalonia are made out of wood. But it could be argued that that is just a type of golems.

Can’t believe I didn’t think of this before: in nearly every supers RPG licensed from a major comic book setting will have plant based species or individusls.
