It kind of sounds like you want to buy the Kalamar Player's Handbook, OA, and The Sovereign Stone d20 core book.

So... just buy them.
They're essentially what you describe.

There's plenty of other books that add more classes to D&D: Psionics Handbook, Oriental Adventures, Kingdom of Kalamar, Rokugan, etc.

Besides, what ever happened to good ol' inventing your own?
 

Maybe try playing a new game or system for a while if you have players getting tired of the same old thing. Pick up GURPS or something, or one of the other D20 games and switch for a while. That's what my groups is planning to do when this current stretch is over.
