Not necessarily project management, but since you seem to be using a Mac, have you looked at Scrivener? I have only just started using it, but I've found it very handy for organizing my text into smaller chunks, and giving those chunks just a brief description so I don't forget what I wanted to include until I get to actually writing it. Plus it's quite easy to move chunks around if you want to re-arrange sections.

I also like to use the "Research" section both to point to handy websites and such, but also to hold all of my other files (notes typed into Word, image files, etc.).

It's not project management software by any stretch, but it might be handy in the "organizing all the text" department.

OneNote might be helpful, though not exactly what you're looking for.

Looks pretty cool on the first look. Has anybody ever seen a Win/Linux equivalent? Because not all have a Mac.
