If you're going for AD&D 2E, what about using the mystic class from Masque of the Red Death and Other Tales (affiliate link) with the gnostic kit from Polyhedron #124? While not inherently specific to Judaism, the gnostic kit says "By spending an extra nonweapon proficiency slot on Religion, the gnostic can become a vested servant of his religion (priest, rabbi, monk, etc.)."Don’t forget that I’m going for 2nd edition on this question.
