I notice that no race makes a good Melee Ranger on your list.

Good point... probably being a bit too restrictive there.

I reckon humans are the answer to everything.
Melee ranger? Hmm ... 20 str, 13 con, 13 wis. Use both starting feats to get chain and scale proficiency.
Ok, maybe a little overboard. 18 str, 16 wis, 13 con.
Weapon focus at 2nd, retrain weapon focus out at 4th to pick up 2WF and 2WD.

I think any build that requires investment in multiple proficiency feats (defender tin cans, for instance) are well suited for humans.

Humans are at least decent at everything, yep. There is no class they will not do well in.

Dragonborn also seem to be rather good at a lot of builds.
