Benefits of the Improved Unarmed Strike feat:

"You are considered to be armed even when unarmed —that is, you do not provoke attacks or opportunity from armed opponents when you attack them while unarmed. However, you still get an attack of opportunity against any opponent who makes an unarmed attack on you.

In addition, your unarmed strikes can deal lethal or nonlethal damage, at your option."

Benefits of the monk Unarmed Attack class feature:

"At 1st level, a monk gains Improved Unarmed Strike as a bonus feat. A monk’s attacks may be with either fist interchangeably or even from elbows, knees, and feet. This means that a monk may even make unarmed strikes with her hands full. There is no such thing as an off-hand attack for a monk striking unarmed. A monk may thus apply her full Strength bonus on damage rolls for all her unarmed strikes.

Usually a monk’s unarmed strikes deal lethal damage, but she can choose to deal nonlethal damage instead with no penalty on her attack roll. She has the same choice to deal lethal or nonlethal damage while grappling.

The monk can make unarmed strikes with her hands full - not a benefit of IUS.
The monk applies full Str bonus to all unarmed strikes - not a benefit of IUS.
The monk can deal lethal or non-lethal damage with unarmed strikes - this is a benefit of IUS as well. However, the monk also has the option to deal lethal or non-lethal damage while grappling - not a benefit of IUS.
The monk treats her unarmed strikes as manufactured or natural weapons - not a benefit of IUS.
The monk gets improved damage - not a benefit of IUS.

EDIT: There are no difference between a monk and someone with the UIS feat in this matter. You're just as skilled martial arts wise (or nearly so) or even better in fact than a monk with the UIS with a dedicated fighter builæd.

This has no relation to the AoO question at all though.
Aggemam - you lose.

The IUS feat doesn't reference the monk. Instead, the monk references IUS.

ie:

Nelly is grey
Monks have IUS

Nelly is an elephant
Monks can use IUS with their hands full

Anything grey is an elephant
Anyone with IUS can use IUS with their hands full

Every character in the game or in real life can do that. Everyone can still try to kick or headbutt someone else regardless of being a monk or not.

Only a monk or someone with the UIS feat is considered armed with those though.

Sure. But please, do cite the rule that says a non-monk can do that while having his hands full.

As already pointed, that's a class feature of the Monk.

How so?

If you are able to make a melee attack, you threaten, therefore you can make an AoO.

If you are using a bow, you have your hands full, and you are unable to make an unarmed strike - unless you are a monk, in which case you can.

That's a way to make an AoO even while using a bow - and that's what this thread is all about.
