It only works, if you are hidden before someone enters. You cannot hide with other people present (under observation), unless you create a diversion (see Bluff) or move out of sight first.

The Shadowdancer's Hide in Plain Sight ability negates these disadvantages, tho.

Does blink work the same way? Or does it use another rule?

Blink is like being invisible, when it comes to attacking. You are not really invisible, people see where you are, but you attack as if you were, because of the confusing blinking.

As for being a sneak attacking Sorcerer, you might want to take a look at the Arcane Trickster prestige class in the DMG, if you have not done so already.

I don't really think much of blink, it's such a random spell effect. But never mind.

The easiest option for you would be an Improved Invisibility spell at the start of each combat. Possibly not the best, due to the possibility of fighting something that sees invisible things, but certainly the most straightforward.
 

I would suggest going Ninja, using your Ghost Step (Invisibility) and then you can make your ranged sneak attack.

The other option is make a Scout, move 10' and shoot and you'll do Skirmish damage every round. Although their Skirmish damage doesn't scale as well as a Rogue. Ninja's Sudden Strike scales as a Rogue's Sneak Attack, so that is your best bet IMO.
