Undead is a fair choice but always check with your DM on common foes.

sounds good to me. Add the Hunter of the Dead prestige class or something along those lines. Definitely could see it./ Maybe name him Van Helsing...

The only word of warning i'd give is that don't stack everything against undead. Though IMO they are one of the best FE choices (along with humans and evil outsiders) i'm currently in a campaign that has had hardly any undead in it from 1st to 18th level, about 6 I can recall. Though if your DM is writing the campaign he more likly to put a few more in to keep you happy.

If you are going to be an undead (or any other ) hunter I’d defiantly take the Nemesis feat form Book of Exalted Deeds.
