Regarding Supernatural, I recall hearing (from here on EN World, actually) that the writer had signed up for 5 seasons, wrote a plot that spanned 5 seasons, and was leaving after the fifth season regardless of what the execs decided to do with the show. Yet there has been some talk that the two main actors have already signed a contract for a sixth season.
So personally, I'm expecting the apocalypse storyline to end with this season but the show to continue on for a sixth season that will be anticlimactic and probably not worth watching, and the show will probably start its slow downward spiral towards cancellation at that point. I expect in the future that when I talk about this show and recommend it to friends that I will not acknowledge the sixth season the way friends of mine didn't acknowledge the fifth season of Babylon 5.
Unless, of course, the new writer(s) put out some fantastic new plots, but really, how do you top the apocalypse?
