I have thought about it and drawn very few ideas, even fewer I think would be fun/appropriate but...
1) The Humans can easily detect Shapeshifters the same way they are detected in Star Trek: Deep Space Nine, if blood, saliva or tissue is severed from the body then it reverts to a liquid state and tries to return to the main body, the wound will naturally seal itself by turning into liquid and filling in the gap before returning to whatever it was before, skin , clothing, hair, etc
2) The creatures are highly sensitive to High Energy sources, sound, light, heat, etc and I guess it was cause them to reveal themselves to those around them.
3) I was considering having the shapeshifting being more of a slightly subconscious thing, Say they are caught in a rope trap (hung suspended by a single length of rope) and are reaching for their dropped sword, just out of reach, they would think "I need to reach that sword" and their arm would extend to reach it.
but I am sure someone will be able to come up with more creative ideas, I am still thinking though
