Crimson/Cursed Empire - The artwork, despite leaning a bit toward the leather fetish, is very good and conveys the dark nature of the setting very well.

Gemini - Very evocative, dark, artwork that conveys the game's setting better in a few full-color, full-page, spreads than most RPGs manage to do over entire game lines.

Children of the Sun - The art was so inspirational, that I bought an extra copy of this game, not to run, but to use as a coffee table conversation piece.

Planescape has my favourite art, but there are some superb drawings in Sky Realms of Jorune. Artesia is good too and different to most other RPG art (not surprising as it was done by the writer/artist of the comic).

The Nocturnals sourcebook for Mutants and Masterminds has some fantastic art, a lot of which was done by the Nocturnals creator himself.

The first edition of Vampire: The Dark Ages is very pretty, too. In fact, a lot of the third edition Vampire books have good art. Werewolf, too. I love Guy Davis and Steve Prescott.

Matt Wilson and the gang from PP have some of the consistently best artwork around. In addition, the artwork in their "No Quarter" Magazine is of the same quality as found in their hard-covered books.

Seconded. Not only is the art great, but it really captures the flavor and atmosphere of their very unique world.
 

I might be a minority, but I find a lot of D&D's art to be quite nice. Of course, it has more than its fair share of bad art, but there's some real gems in there!

Legend of the Five Rings has some great art. It has a lot of Jason Engle, one of my favourites (he's a master of light and shadow)
