The original Dark Matter Source book for Alternity. Alternity in general had artwork that was very hit and miss (and mostly miss to me). But the Dark Matter Book was brilliant. the art and faux peices were right on for the mood and the game.

Moldvay/Cook Basic/Expert Rulebooks.

Those books really gave gave D&D its own unique look, almost completely non-derivative of other fantasy sources, unlike most RPG books today, which seem to favor a mixture of Anime and Warhammer flavors.

I also loved the cartography from the old ICE MERP games. Those maps were beautiful and really brought the setting to life!

I'm a big fan of the art in Green Ronin's Thieves World, Black Company and Freeport settings, but all their art is usually top notch.
