Also in the adventure their is a possibility to fight the Graben family, but there is no stats for them. What kind of undead did you use (AD&D or 3.x) ? Any suggestion ?

The Ravenloft Denizens of Dread has stats for these, they are called Lebendtod. It's a template for this type of undead.
