It's an RPG so being sneaky isn't really an option for most situations. More often than not you are hacking things up with a lightsaber. Well, it's theoretically possible to crank your Stealth up to a ridiculous level, especially with some of the special items from Yavin. So maybe you could just walk past everyone? But even if you can't, you're still a 20th level Jedi by then, so there's always Force powers.
