Wow, that sounds wonderful. This is pre Knights of the Old Republic, correct?
To be honest, what I would LIKE to play is a Grey Jedi, so someone who skirts the line between light and dark. Someone who's philosophy is that of the Grey Jedi code:
There is Emotion, yet peace.
There is Serenity, yet Passion.
There is Chaos, yet Harmony.
There is no Life, without Death.
I serve the Balance, and through It
The Force Shall Guide Me.
I did find this conversion of Star Wars Saga to 5e:
http://www.docfoc.com/star-wars-dd-5th-edition-conversion. I was planning on using it in my own games. As for character creation, it seems to hold very close to 5e, with archetypes and all. (And they have Force Adept as a base class, with Grey being one of the archetypes.) It would probably be too late in your game to switch game mechanics, though.
With the current character creation choices, what sort of build would you suggest for a Grey Jedi? Jedi Knight, then Force Adept as a Prestige class?
