Can I attack the Saurian once and then jump out of the tree as a move?

Yes, but if the Saurian is still alive it can make one Opportunity Attack against you. IF you are training in Dexterity (Acrobatics) you can attempt a ability skill check vs. the target's Reflex Defense (in this case a 14) to use the Disengage action as a bonus action. So you can try that, after you make you attack roll...
