The forthcoming Game Mastery Guide (by Paizo) should have many npc statblocks (I don't know what levels they are though).
Pathfinder « Dingles Games This here's a Semi-Random npc/monster generator (you can take a monster race [in addition to normal races] and add levels if you want to. you must choose the feats and gear though- it does count the gp value of your treasure and how many feats you can choose. You can also adjust the ability scores if you wish)
Monster Advancement Generator This allows you to advance monsters by applying templates or adding Hit Dice.
