Initiative is a DEX CHECK, not a DEX SAVING THROW.
So resilent DEX does nto help you with in checks.

Damn, good point. Then in that case alert is probably better, because even without proficiency, +2 or +3 to dex saving throws is pretty significant over nothing at all right? Or is it still more worth it to have the proficiency bonus at the cost of some initiative and the other alert bonuses?

I guess it dpends on your playstyle and if your DM handles surprise right.
By the book, the chance of being surprised by a group of enemies is quite low, because if you notice any threat you are not surprise. So if you have drawn your weapon because you expect an immediate attack, you can't be surprised anyway.
It also depends on your party. If the wizard happily throws fireballs and you happily enter melee, you actiually don't really want to be the first in the initiative.

You could always go crazy, dump literally every mental stat, try and max out your physical stats, go Champion, pick up Archery and GWF styles to build some kind of switch hitting damage tank fightery fighter of DOES EVERYTHING.

Probably wouldn't work that well, but someone could try. And if that kind of shenanigan would work anywhere in the game, it would be in the class with the most ASIs.

Going with the standard human, "dumping" isn't even strictly necessary. Go 15/13/13/9/9/9. You have no 0 mods, get the full benefit of medium armor, and only +1 difference between Dex and Str. Champion is a possibility, but you could go for Barbarian too. The standard 5 ASIs would get you to 18 in each of the three physical stats, or you could push Dex to 20, dropping the Str boost (presumably for GWM), and let the Barbarian capstone push you to 22 Str/20 Dex/22 Con.
