Um, restrained, according to the SRD doesn't affect strength:

A restrained creature’s speed becomes 0, and it can’t benefit from any bonus to its speed.
Attack rolls against the creature have advantage, and the creature’s attack rolls have disadvantage.
The creature has disadvantage on Dexterity saving throws.

I also don't remember ropers lifting people in the air in prior editions. They usually pull people into the central maw. So I'm curious about that, too.

It's a special Roper thing. Also the Roper is on the roof thus the pulling you up.
