In a similar manner to Total Defense, does the AC bonus from Combat Expertise and Fighting Defensively also apply during a move action made that round.

So, for example, a character moves 30 ft to strike monster, choosing to use Combat Expertise for the strike. During the move part of the action, he draws an AoO. Does he get the AC bonus from Combat Expertise against that AoO or only once he actually executes the attack?

When I DM the game, I let the benefits and the penalties of these sort of options start when the player declares them and end at the beginning of your turn in the next round. So if the player wants, he can declare he's using FD and/or CE at the start of the round and then take the move action before the attack action. I see no problems in giving him the AC bonus vs the AoO, but this may be unorthodox by the rules, maybe you should better apply all the modifiers starting only from the attack action. However, it happens almost always that a player declares when he's taking the actual attack action.

I think there is by the way a mistake in the SRD about CE, it says the benefit lasts until your next action but I think it was meant to be until your next turn.
