Or, it's the old Toxic Masculinity thing of a man being able to "sow his wild oats", but his woman must be chaste. With what we now know about Whedon, that's as good a bet as any....and, and he had no problem banging Inara's friend during the series. I think it was a reaction Mal had to being lets say more rural, more rough around the edges, and Inara's fancy airs puts him on tilt. Its an act mostly to keep distance so he doesnt defecate where he eats as the saying goes.
Edit - There's a reunion panel show that they did, in which the cast spoke about where their characters' arcs were headed. What they had planned for Inara was... not good.
