Okay, maybe I wan't clear enough, but the size category chosen comes with all the perks and drawbacks (AC/Attack Modifier, Grapple Modifier & Hide Modifier) sans the ability modifiers. Since you're not scaling natural weapon/unarmed damage or Level Adjustment with size, it makes less of a difference in sizes (Small gargs have little reason to bother with weapons, for instance, because they do just as much or more damage unarmed, while Large gargs are significantly better off using weapons than anything else).
